The secret behind Duvel's bubbles

Duvel(デュベル)の泡
Impressive fluffy foam!

The secret of Duvel's bubbles lies mainly in the following elements:

  1. Secondary fermentation
Duvel undergoes a second fermentation during the fermentation process. This second fermentation produces carbon dioxide (CO₂) in the beer, which creates finer, longer-lasting bubbles. This fermentation process creates the rich, distinctive bubbles of Duvel.

  2. Special yeast
Duvel uses a special yeast that not only achieves a high alcohol content during the fermentation process, but also plays a major role in the density and persistence of the foam, which helps to create a firm foam that will not break down over time.

  3. Carbonation strength
Duvel is a beer with high carbonation, which directly affects the quality of the foam. Carbon dioxide is dissolved in the beer at a high concentration, and when poured into a glass, fine, fine bubbles rise up. This strong carbonation keeps the foam strong and makes the beer refreshing to drink.

The combination of these elements creates Duvel's characteristic beautiful foam, allowing you to enjoy the beer's aroma and flavor more fully.

The story behind the birth of Duvel

source:DUVEL official website

Jan Leonard Moortgat founded the farm brewery "Moortgat" together with his wife Maria de Block in 1871. At that time there were more than 4,000 breweries in Belgium and his beer gradually gained popularity through trial and error, especially among the upper classes in Brussels and the opening of a sales point in Laeken marked the beginning of his success.

In the 1900s, his two sons, Albert and Victor, joined the business and shared the responsibilities. Inspired by British ales during World War I, Albert decided to create a special British-style beer. In 1918, he went to Scotland to find the perfect yeast, which he succeeded in creating.

Between 1918 and 1923, the brothers experimented and developed a new beer called "Victory Ale". After a tasting, the beer was named "Duvel" (Dutch for "Devil") and released on the market in 1923. This beer has since become a symbol of Belgium.

Of particular note was the reaction of the village leaders at the tasting of Duvel's birth. The participants were amazed by the strong aroma and unique flavor of Duvel, and one shoemaker commented:This is a real duvel (the devil)" It is said that this comment led to the naming of the beer "Dubel." Such a compliment made a huge impression in the Catholic region at the time.

Duvel was launched on the market in response to these acclaims and is now one of Belgium's most iconic beers.
